Ingredients

Broth and Noodles

Taco Meat

  • 2 cloves garlic, minced
  • 1 tablespoon taco seasoning (store-bought or homemade)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn (frozen or canned)

  • 1 jalapeño, sliced (optional)

Instructions

  1. Preparing the Broth: In a large pot, pour in the 4 cups of chicken or vegetable broth. Bring to a gentle simmer over medium heat, preparing the base for the ramen.
  2. Cooking the Noodles: Add the instant ramen noodles to the simmering broth. Cook according to package instructions (about 3-4 minutes) until tender but still firm. Remove from heat and transfer the noodles to a bowl, optionally drizzling with olive oil to prevent sticking.
  3. Preparing the Taco Meat: In a separate skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent. Add minced garlic and cook for an additional minute to release its aroma. Add the ground beef or turkey, breaking it up with a spatula, and cook until browned (about 5-7 minutes). Drain excess fat if using beef. Sprinkle in taco seasoning and stir well to evenly coat the meat. Mix in black beans, corn, and diced tomatoes.
