Ingredients
For the Taco Meat:
- 1 pound ground beef or ground turkey
- 1 tablespoon olive oil (if using lean meat)
- 1 packet (1 oz) taco seasoning or homemade mix
- ⅓ cup water
For the Bowl:
- 2 cups cooked rice or cauliflower rice
- 1 cup canned black beans, drained and rinsed
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 cup cherry tomatoes, halved
- 1 avocado, diced
- ½ cup shredded cheddar or Mexican blend cheese
- ¼ cup chopped red onion
- ¼ cup chopped fresh cilantro
- Lime wedges for serving
- Salsa or sour cream for topping (optional)
Instructions
- Cook the Taco Meat: In a skillet over medium heat, add the olive oil and ground beef or turkey. Cook until browned and cooked through, about 6 to 8 minutes. Drain excess fat if needed. Stir in taco seasoning and water, simmer for 2 to 3 minutes until thickened.
