Fries
- 4 large russet potatoes (cut into thin fries)
- 3 tablespoons olive oil
- 1 teaspoon paprika

- 1/4 teaspoon cayenne pepper (optional)

Cheese Sauce
- 1 cup cheddar cheese (shredded)
- 1/2 cup whole milk
- 1 tablespoon butter
- 1 tablespoon all-purpose flour
- 1/4 teaspoon salt
- 1/4 teaspoon taco seasoning (optional)
Instructions
- Preheat and Soak: Preheat the oven to 425°F (220°C). Place the cut potatoes in a bowl of cold water and soak for 30 minutes to remove excess starch.
- Dry and Season Fries: Drain the potatoes and pat dry thoroughly with paper towels. Toss the fries in olive oil, paprika, garlic powder, onion powder, chili powder, cayenne pepper (if using), salt, and black pepper until evenly coated.
- Bake Fries: Spread the fries in a single layer on a parchment-lined baking sheet. Bake for 25 to 30 minutes, flipping halfway through, until they are golden and crispy.
- Make Cheese Sauce: While the fries bake, melt the butter in a saucepan over medium heat. Whisk in the flour and cook for 1 minute. Slowly add the milk, whisking continuously, and cook until the mixture slightly thickens (about 2 to 3 minutes). Add shredded cheddar cheese, salt, and taco seasoning (if using), stirring until smooth.
- Serve: Serve the hot baked fries topped with warm cheese sauce or offer the sauce on the side for dipping.
Notes
- For an air fryer version, cook the seasoned fries at 400°F for 15–18 minutes, shaking halfway through.
