Description

Taco Bell Meximelts are a quick and delicious Tex-Mex meal featuring seasoned ground beef, melted cheddar jack cheese, and fresh pico de gallo wrapped in soft flour tortillas. Perfect for a kid-friendly dinner or easy weeknight meal, these cheesy taco wraps combine bold flavors and melty goodness in a convenient handheld form.


Ingredients

Meat and Seasoning

  • 1 lb ground beef
  • 1 packet taco seasoning (or 2 tbsp homemade taco seasoning)
  • 1/4 cup water

Cheese and Toppings

  • 1 cup shredded cheddar jack cheese (or a blend of cheddar and Monterey Jack)
  • 1/2 cup pico de gallo (or finely chopped tomato, onion, and cilantro mix)
  • Optional toppings: sour cream, jalapeños, hot sauce

Wrap

  • 6 small flour tortillas (68 inch)


Instructions

  1. Cook the ground beef: In a skillet over medium heat, cook the ground beef until fully browned. Drain excess grease, then stir in taco seasoning and water. Simmer for 5 minutes until the mixture thickens and flavors meld.
  2. Warm the tortillas: Heat the flour tortillas in the microwave or a dry skillet until they are soft and pliable, making them easier to fold and roll without breaking.
  3. Assemble the Meximelts: Place a few tablespoons of the seasoned beef in the center of each tortilla. Sprinkle over shredded cheddar jack cheese and add a spoonful of pico de gallo on top.
  4. Fold and roll: Fold the sides of the tortilla over the filling and roll it up burrito-style to enclose all the ingredients securely.
  5. Heat to melt cheese: Wrap each filled tortilla in a paper towel and microwave for 30–45 seconds to melt the cheese and warm the filling through. Serve immediately for best taste and texture.
