Description

Ingredients

For the cake:

  • 4 large eggs
  • ¾ cup granulated sugar
  • 1 teaspoon vanilla extract
  • ¼ cup vegetable oil
  • ½ cup all-purpose flour
  • ¼ cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • powdered sugar for dusting

For the filling:

  • 1 cup heavy cream
  • ¼ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup cherry pie filling or chopped maraschino cherries

For the ganache topping (optional):

  • ½ cup heavy cream
  • 4 ounces semi-sweet chocolate chips


Instructions

  1. Preheat oven and prepare pan: Preheat oven to 350°F (175°C). Line a 10×15-inch jelly roll pan with parchment paper and lightly grease.
  2. Mix cake batter: Beat eggs and sugar until pale, add vanilla and oil. Sift dry ingredients, fold into egg mixture, and pour into pan. Bake for 10–12 minutes.
  3. Roll cake: Dust a towel with powdered sugar, invert and roll the baked cake in the towel. Let cool.
