Description

This Sweet Tart Crust recipe yields a delicate, buttery crust that perfectly complements a variety of fillings. With a hint of sweetness and a tender texture, this homemade crust is a versatile base for sweet tarts and pies.

Ingredients

Dry Ingredients:

  • 1 1/4 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 1/4 teaspoon salt

Wet Ingredients:

  • 1/2 cup (1 stick) unsalted butter (cold and cubed)
  • 1 large egg yolk
  • 12 tablespoons ice water (as needed)

Instructions

  1. Prepare the Dough: In a food processor, combine the flour, powdered sugar, and salt. Pulse briefly to mix. Add the cold, cubed butter and pulse until the mixture resembles coarse crumbs. Add the egg yolk and pulse again until the dough begins to come together.
  2. Form the Dough: Turn the dough out onto a lightly floured surface and form into a flat disk. Wrap in plastic wrap and chill for at least 30 minutes.
  3. Roll and Bake: Preheat the oven to 375°F (190°C). Roll out the chilled dough to fit a 9-inch tart pan. Press the dough into the pan, trim the edges, and prick the bottom with a fork. Bake as directed, cool, and fill as desired.

Notes

  • For added flavor, you can mix in 1/2 teaspoon of vanilla extract or almond extract when adding the egg yolk.
  • This crust pairs well with fruit curds, pastry cream, or chocolate ganache.
