These Sweet Potato Pie Bites are perfect for holiday gatherings or a sweet treat any time. With a spiced sweet potato filling in a bite-sized portion, they’re easy to make and even easier to enjoy.
Ingredients
Filling:
- 1 cup mashed cooked sweet potato
- 1/4 cup brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/8 teaspoon salt
- 1/3 cup evaporated milk
Crust:
- 24 mini phyllo shells or mini pie crusts
- Whipped cream, for topping (optional)
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C).
- Mix filling: In a medium bowl, combine sweet potato, brown sugar, egg, vanilla, cinnamon, nutmeg, salt, and evaporated milk until smooth.
- Fill shells: Place shells on a baking sheet. Spoon sweet potato filling into each shell, almost to the top.
- Bake: Bake for 18 to 22 minutes until set and slightly puffed.
- Cool and serve: Remove from oven, let cool, top with whipped cream if desired, and serve warm or chilled.
Notes
- You can use pumpkin puree as a substitute for sweet potato.
- Bites can be made a day ahead and stored in the refrigerator.
