Description

Sweet Garlic Carrots are tender roasted carrots coated in a garlicky honey glaze, delivering the perfect balance of sweet and savory with caramelized edges and vibrant color.

Ingredients

  • 1 1/2 lbs carrots, peeled and sliced into sticks or rounds
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 tablespoons honey or maple syrup
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: 1 tablespoon fresh parsley, chopped

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together olive oil, minced garlic, honey (or maple syrup), salt, and pepper.
  3. Add sliced carrots to the bowl and toss until evenly coated.
  4. Spread carrots in a single layer on the prepared baking sheet.
  5. Roast for 20–25 minutes, tossing halfway through, until tender and caramelized at the edges.
  6. Remove from oven, sprinkle with fresh parsley if using, and serve warm.

Notes

  • Garnish with parsley, citrus zest, or toasted sesame seeds for added flavor and color.
  • Pairs well with chicken, salmon, or grain bowls.
  • Serve in rustic bowls, lined on platters, or skewered for appetizers.
  • Store in the fridge up to 3 days in an airtight container.
  • Freeze cooled carrots on a tray, then transfer to freezer bags for up to 2 months.
  • Reheat in a 350°F oven for 10 minutes or sauté briefly with olive oil.
  • Use baby carrots if desired; adjust roasting time accordingly.
  • Ensure caramelization by not overcrowding the pan and using high heat.
  • Make ahead and reheat before serving—great for entertaining.
  • Maple syrup is a perfect vegan substitute for honey.
