Description

Ingredients

Dry Ingredients:

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ teaspoon smoked paprika

Wet Ingredients:

  • 2 large eggs
  • ½ cup milk

Additional Ingredients:

  • 1½ cups fresh or frozen (thawed) sweet corn kernels
  • ¼ cup chopped green onions
  • ¼ cup grated cheddar cheese
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons olive oil for frying
  • 4 tablespoons unsalted butter, softened
  • 1½ tablespoons honey


Instructions

  1. Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, salt, and smoked paprika.
  2. Wet Ingredients: In another bowl, beat the eggs and milk together. Add the wet ingredients to the dry ingredients and stir until just combined.
  3. Adding Corn and More: Fold in the corn, green onions, cheddar cheese, and parsley.
  4. Cooking Fritters: Heat olive oil in a non-stick skillet over medium heat. Scoop about ¼ cup of batter per fritter and flatten slightly in the pan. Cook for 2–3 minutes per side or until golden brown and cooked through.
