Description

Sweet Baby Ray’s Crockpot Chicken is a flavorful and easy-to-make slow-cooked dish featuring tender boneless, skinless chicken breasts simmered in a tangy, sweet BBQ sauce blend. Perfect for sandwiches, served over rice, or paired with your favorite sides, this recipe requires minimal prep and delivers deliciously juicy chicken every time.

Ingredients

Chicken

  • 4 boneless, skinless chicken breasts

Sauce

  • 1 ½ cups Sweet Baby Ray’s BBQ Sauce (or any BBQ sauce of your choice)
  • ¼ cup honey (optional, for added sweetness)
  • 1 tbsp Worcestershire sauce
  • 1 tbsp apple cider vinegar (optional, for a tangy kick)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp smoked paprika (optional)
  • Salt and pepper, to taste

Instructions

  1. Prepare the Chicken: Place the boneless, skinless chicken breasts in the bottom of the crockpot, ensuring they lay flat for even cooking.
  2. Mix the Sauce: In a medium bowl, whisk together Sweet Baby Ray’s BBQ sauce, honey if using, Worcestershire sauce, apple cider vinegar, garlic powder, onion powder, smoked paprika, salt, and pepper until fully combined.
  3. Cook the Chicken: Pour the prepared sauce mixture evenly over the chicken breasts in the crockpot. Cover with the lid and cook on low heat for 6 to 7 hours or on high heat for 3 to 4 hours, until the chicken is thoroughly cooked and tender enough to shred.
  4. Shred the Chicken: Remove the cooked chicken breasts from the crockpot and shred them using two forks. Return the shredded chicken back into the crockpot and stir well to coat all pieces evenly with the sauce.
  5. Serve and Enjoy: Serve the saucy shredded chicken hot on sandwich buns, over rice, or alongside your favorite side dishes for a comforting and delicious meal.

Notes

  • For thicker sauce, cook uncovered on high for an additional 15-30 minutes after shredding.
  • Optionally add more spices like chili powder or cumin for extra flavor.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 4 days.
  • This recipe is easily doubled for larger crowds.
  • Using the low setting yields more tender chicken, but high works when short on time.
