These Sweet and Savory Roasted Stuffed Dates are an easy and elegant appetizer, featuring medjool dates stuffed with goat cheese and wrapped in crispy bacon for the perfect balance of flavors.

- 20 Medjool dates, pitted
- 5 oz goat cheese
- 10 slices bacon, cut in half
- 1 tbsp honey (optional, for drizzling)
- Fresh thyme leaves (optional, for garnish)
- Toothpicks
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Make a small slit in each date and remove the pit if not already pitted.
- Fill each date with about 1 teaspoon of goat cheese.
- Wrap each stuffed date with a half slice of bacon and secure with a toothpick.
- Place the bacon-wrapped dates on the prepared baking sheet, seam side down.
- Bake for 20–25 minutes, turning once halfway through, until the bacon is crispy.
- Remove from oven and optionally drizzle with honey and sprinkle with fresh thyme leaves.
- Let cool slightly before serving.
Notes
- Substitute goat cheese with blue cheese or cream cheese for a different flavor.
- Use turkey bacon for a lighter version.
- Can be assembled ahead and refrigerated before baking.
