Description

A delightful and flavorful Sun-Dried Tomato Pasta Salad that is perfect for a refreshing meal or as a side dish. This Mediterranean-inspired dish combines pasta with sun-dried tomatoes, cherry tomatoes, olives, feta cheese, and a tangy dressing.


Ingredients

Main Ingredients:

  • 12 ounces rotini or penne pasta
  • 1/2 cup sun-dried tomatoes in oil, chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 cup black olives, sliced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup red onion, finely diced
  • 1/4 cup fresh basil, chopped
  • 2 tablespoons capers (optional)
  • 1/4 cup grated Parmesan cheese

For the dressing:

  • 1/3 cup olive oil (from the sun-dried tomato jar if available)
  • 2 tablespoons red wine vinegar
  • 1 clove garlic, minced
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook the Pasta: Boil pasta until al dente, then rinse with cold water.
  2. Prepare the Dressing: Whisk together olive oil, red wine vinegar, garlic, Dijon mustard, oregano, salt, and pepper.
  3. Combine Ingredients: Toss pasta with sun-dried tomatoes, cherry tomatoes, olives, feta, red onion, basil, capers, and Parmesan.
