Ingredients
Main Ingredients:
- 12 ounces rotini or penne pasta
- 1/2 cup sun-dried tomatoes in oil, chopped
- 1 cup cherry tomatoes, halved
- 1/2 cup black olives, sliced
- 1/2 cup crumbled feta cheese
- 1/4 cup red onion, finely diced
- 1/4 cup fresh basil, chopped
- 2 tablespoons capers (optional)
- 1/4 cup grated Parmesan cheese
For the dressing:
- 1/3 cup olive oil (from the sun-dried tomato jar if available)
- 2 tablespoons red wine vinegar
- 1 clove garlic, minced
- 1 teaspoon Dijon mustard
- 1/2 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Cook the Pasta: Boil pasta until al dente, then rinse with cold water.
