Ingredients

Sugar Cookie Crust:

1 (16.5-ounce) roll refrigerated sugar cookie dough

Cheesecake Filling:

2 (8-ounce) packages cream cheese, softened
1/2 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
Pinch of salt

Topping:

Optional sprinkles or powdered sugar


Instructions

  1. Preheat and Prepare: Preheat oven to 350°F (175°C) and line an 8×8-inch or 9×9-inch baking pan with parchment paper.
  2. Make the Crust: Press two-thirds of the sugar cookie dough into the pan to form the crust.
  3. Prepare the Filling: In a bowl, beat cream cheese and sugar until smooth. Add egg, vanilla, and salt; beat until combined.
  4. Layer and Bake: Pour cream cheese mixture over crust, spread evenly. Crumble remaining cookie dough on top. Bake for 30–35 minutes until set.
