For the Meatloaf
- 2 lbs ground beef (preferably 80/20 blend)
- 1 box (6 oz) seasoned stuffing mix
- 2 large eggs
- 1 cup milk
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1/2 cup ketchup
- 1 tablespoon Worcestershire sauce
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
For the Glaze
- 1/3 cup ketchup
- 2 tablespoons brown sugar
- 1 tablespoon Dijon mustard
Instructions
- Prep the Oven and Pan: Preheat your oven to 350°F (175°C). Line a loaf pan with parchment paper or lightly grease it for easy removal.
- Soak the Stuffing Mix: In a large bowl, combine the stuffing mix and milk. Stir and let soak for about 5 minutes until softened and most liquid is absorbed.
- Mix the Meatloaf: Add ground beef, eggs, diced onion, minced garlic, ketchup, Worcestershire sauce, salt, and pepper to the bowl with soaked stuffing. Mix gently with clean hands or a spatula until just combined—do not overmix, to keep the loaf tender.
- Shape and Place in Pan: Transfer the mixture to the prepared loaf pan and shape it into an even loaf, pressing slightly to fill corners. Smooth the top.
- Make the Glaze: In a small bowl, mix together ketchup, brown sugar, and Dijon mustard. Spread half of the glaze evenly over the top of the meatloaf.
- Bake: Place in the oven and bake for 45 minutes. After 45 minutes, carefully remove from oven and spread the remaining glaze on top. Return to oven and bake an additional 15-20 minutes, or until internal temperature reaches 160°F (71°C).
- Rest and Serve: Remove the meatloaf from the oven and let it rest in the pan for 10 minutes to retain juices. Slice and serve warm with your favorite sides.
Notes
- If you prefer, substitute ground turkey or chicken for a lighter version.
- For extra flavor, add 1/2 cup chopped mushrooms or bell peppers to the mix.
- Leftovers store well in the fridge for up to 3 days—meatloaf makes a great sandwich the next day!
