Description

This Stuffed Pepper Casserole is a comforting and flavorful twist on classic stuffed peppers. Made with ground beef or turkey, bell peppers, rice, and a blend of savory spices, this easy one-pot meal is perfect for a cozy dinner.


Ingredients

Ingredients:

  • 1 lb ground beef or ground turkey
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 cup uncooked long grain white rice
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 can (8 oz) tomato sauce
  • 2 cups beef or chicken broth
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 1/2 cups shredded cheddar or mozzarella cheese
  • fresh parsley for garnish


Instructions

  1. In a large skillet or Dutch oven, heat olive oil over medium heat. Add the onion and cook for 2–3 minutes until softened.
  2. Add the garlic and cook for another 30 seconds.
  3. Stir in the ground beef or turkey and cook until browned, breaking it up with a spoon. Drain any excess grease if needed.
  4. Add the diced peppers, uncooked rice, diced tomatoes, tomato sauce, broth, Italian seasoning, paprika, salt, and pepper. Stir to combine and bring to a boil.
  5. Reduce heat to low, cover, and simmer for 18–20 minutes or until the rice is tender and the liquid is mostly absorbed.
  6. Stir in half of the shredded cheese.
  7. Transfer to a casserole dish if desired, top with the remaining cheese, and broil for 2–3 minutes until melted and bubbly.
  8. Garnish with fresh parsley and serve warm.

Notes

  • To make it spicy, add red pepper flakes or diced jalapeños.
  • This dish is also freezer-friendly and reheats well for meal prep.
