Ingredients

For the Dough:

  • 1/2 cup unsalted butter (softened)
  • 1/2 cup granulated sugar
  • 1 large egg
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/2 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt

For the Filling:

  • 4 ounces cream cheese (softened)
  • 1/4 cup powdered sugar
  • 1/2 teaspoon lemon zest

Optional:

  • Additional powdered sugar for dusting

Instructions

  1. Prepare the Filling: In a small bowl, mix the cream cheese, powdered sugar, and lemon zest until smooth. Scoop out 1-teaspoon portions and freeze for at least 30 minutes.
  2. Make the Dough: Cream together butter and sugar, then add egg, lemon juice, lemon zest, and vanilla. In a separate bowl, mix dry ingredients and combine into a soft dough.
  3. Assemble Cookies: Preheat oven, flatten dough portions, place frozen cream cheese ball in center, seal and form a ball. Bake until golden.
  4. Finish: Cool on a wire rack and dust with powdered sugar if desired.

Notes

  • Keep cream cheese filling frozen until ready to use to prevent oozing.
