Instructions

  1. Prepare the cheesecake filling: In a small bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy, then set aside.
  2. Cut out pie crust circles: Roll out the refrigerated pie crusts on a lightly floured surface. Using a large biscuit cutter or a bowl approximately 4 inches in diameter, cut out circular pieces of dough for the pies.
