Description

Deliciously soft pretzel rolls stuffed with scrambled eggs, crispy bacon, cheddar cheese, and optional breakfast sausage. These savory breakfast pretzel rolls are boiled briefly in baking soda water to achieve a classic pretzel texture, then baked to golden perfection for a hearty, flavorful start to your day.

Ingredients

Dough

  • 1 can refrigerated pizza dough (or homemade dough)

Filling

  • 4 large eggs
  • 4 slices cooked bacon, chopped
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup cooked breakfast sausage (optional)
  • 1 tablespoon butter
  • Salt and black pepper to taste

Boiling Solution

  • 8 cups water
  • 1/4 cup baking soda

Finishing

  • 1 egg, beaten (for egg wash)
  • Coarse sea salt for topping

Instructions

  1. Preheat and prepare baking sheet: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking during baking.
  2. Cook the filling: In a skillet over medium heat, melt the butter. Scramble the eggs with a pinch of salt and pepper until just set but still soft. Remove from heat and stir in the chopped cooked bacon, shredded cheddar cheese, and cooked breakfast sausage if using.
  3. Shape the dough: Roll out the refrigerated pizza dough on a lightly floured surface and cut it into 4 equal rectangles. Place a generous spoonful of the egg mixture in the center of each rectangle. Fold the dough around the filling, pinching all seams to seal completely, then shape each filled dough piece into a roll or mini loaf.
  4. Boil the rolls: In a large pot, bring 8 cups of water to a boil. Carefully add the baking soda to the boiling water — it will bubble vigorously. Boil each stuffed roll for 30 seconds, which gives the pretzel rolls their characteristic chewy crust.
  5. Prepare for baking: Using a slotted spoon, transfer the boiled rolls to the lined baking sheet. Brush each roll with the beaten egg wash and sprinkle with coarse sea salt for flavor and texture.
  6. Bake: Bake the rolls in the preheated oven for 15 to 18 minutes, or until they turn golden brown and are fully cooked through.
  7. Cool and serve: Allow the rolls to cool slightly on a wire rack before serving warm. They can be enjoyed immediately or reheated later.

Notes

  • Best served warm to enjoy the cheesy, savory filling at its peak.
  • Can be made ahead and reheated; simply warm in the oven to keep crust crisp.
  • Customize the filling with different cheeses or add sautéed vegetables like peppers and onions for extra flavor and nutrition.
  • For a vegetarian version, omit bacon and sausage and add sautéed mushrooms or spinach.
