Description

These Stuffed Breakfast Pretzel Rolls are a delicious savory breakfast option that combines fluffy scrambled eggs, crispy bacon or sausage, and gooey cheddar cheese, all wrapped in a soft pretzel dough and baked to golden perfection. Perfect for a satisfying breakfast on the go or a weekend brunch treat!

Ingredients

Dough:

  • 1 can (16 oz) refrigerated pizza dough or pretzel dough

Filling:

  • 4 large eggs
  • ½ cup cooked breakfast sausage or crumbled bacon
  • ½ cup shredded cheddar cheese
  • 2 tablespoons milk

Additional:

  • 1 tablespoon butter, melted
  • 1 teaspoon everything bagel seasoning or coarse salt
  • Nonstick spray or oil for greasing

Instructions

  1. Preheat the oven: Preheat the oven to 375°F and line a baking sheet with parchment paper.
  2. Prepare the filling: In a skillet, scramble the eggs with milk over medium heat until just set. Stir in the sausage or bacon and remove from heat.
  3. Assemble the rolls: Roll out the dough and cut into 4 equal rectangles. Place a portion of the scrambled egg mixture and shredded cheese in the center of each. Fold the dough around the filling and pinch the seams to seal, forming a roll.
  4. Bake: Place the rolls seam-side down on the prepared baking sheet. Brush with melted butter and sprinkle with everything bagel seasoning or coarse salt. Bake for 15 to 18 minutes, or until golden brown.
  5. Serve: Let cool slightly before serving.

Notes

  • These rolls are great for make-ahead breakfasts—just refrigerate or freeze and reheat.
  • Try different fillings like sautéed veggies, ham, or pepper jack cheese.
