Description

A refreshing and vibrant Strawberry Sparkler Mocktail made with homemade strawberry syrup, fresh berries ice cubes, lemon juice, and sparkling water. Perfect for a light, fruity, and bubbly non-alcoholic drink to enjoy on warm days or special occasions.


Ingredients

Fruit Ice Cubes

  • Fresh Blueberries, halved, ½ cup
  • Fresh Strawberries, chopped, ½ cup
  • Water, enough to fill the ice cube tray

Strawberry Syrup Puree

  • Fresh or frozen strawberries, 1½ cups
  • Water, 1 cup
  • Maple syrup, ¼ cup (optional – can substitute honey or coconut sugar or omit for sugar-free)

Sparkling Drink

  • Strawberry syrup puree, ½ cup (adjust to taste)
  • Lemon juice, 1-2 tablespoons (freshly squeezed)
  • Sparkling water, 1 cup (chilled)


Instructions

  1. Prepare Berry Ice Cubes: Chop the strawberries and halve the blueberries. Place them evenly into an ice cube tray and fill the tray with water. Freeze the tray until the cubes are completely solid, which usually takes about 4-6 hours or overnight for best results.
  2. Make Strawberry Syrup Puree: In a saucepan over medium heat, combine the strawberries, water, and maple syrup. Simmer the mixture gently until the strawberries are soft and cooked through, about 10-12 minutes. Remove from heat and blend using an immersion blender or regular blender until the mixture is smooth and thick like a syrup. Allow it to cool, then refrigerate until ready to use.
  3. Assemble the Strawberry Sparkler: In each serving glass, add about 2-3 berry ice cubes, pour in approximately ½ cup of the chilled strawberry syrup puree, squeeze in 1-2 tablespoons of lemon juice, and top off with 1 cup of sparkling water. Stir gently to combine all the flavors. Taste and adjust sweetness or lemon juice according to preference.
  4. Serve and Enjoy: Serve the mocktail immediately while the ice cubes are still frozen and the drink is bubbly and chilled for a refreshing experience.

Notes

  • You can omit the maple syrup or substitute with honey or coconut sugar to adjust sweetness or keep it sugar-free.
  • The berry ice cubes not only chill the drink but also add extra burst of berry flavor as they melt.
