Description

This Strawberry Poppyseed Dressing is a delightful, fruity vinaigrette that adds a burst of flavor to salads. Made with fresh strawberries, honey, and a hint of poppy seeds, this dressing is a perfect balance of sweet and tangy.

Ingredients

Fresh Strawberry Dressing:

  • 1 cup fresh strawberries (hulled and halved)
  • 2 tablespoons honey or maple syrup
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon lemon juice
  • 1/4 cup olive oil or avocado oil
  • 1 tablespoon poppy seeds
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions

  1. Blend the Ingredients: In a blender or food processor, combine strawberries, honey, apple cider vinegar, lemon juice, salt, and pepper. Blend until smooth.
  2. Emulsify with Oil: With the motor running, slowly drizzle in the olive oil until creamy.
  3. Add Poppy Seeds: Stir in the poppy seeds by hand.
  4. Adjust and Chill: Taste and adjust sweetness or acidity. Chill for at least 15 minutes before serving. Shake well before use.

Notes

  • Use very ripe strawberries for optimal flavor.
  • Pairs well with spinach salads, grilled chicken, goat cheese, and nuts.
  • Store in the refrigerator for up to 5 days.
