Ingredients
For the Topping
- 1/2 cup old fashioned oats
- 1/2 cup brown sugar
- 2/3 cup flour
- 1/3 cup salted butter, melted
- 1/2 tsp cinnamon
For the Fruit Filling
- 2 1/2 cups peaches, peeled and sliced (about 3 peaches)
- 1 cup sliced strawberries
For the Syrup
- 1/4 cup brown sugar
- 3 teaspoons cornstarch
- 1/3 cup water
- 1/8 teaspoon salt
- 1/2 teaspoon vanilla extract
Instructions
- Mix the topping: In a medium bowl, combine the oats, 1/2 cup brown sugar, flour, and cinnamon. Stir in the melted salted butter and mix until the mixture is crumbly.
- Prepare the base layer: Spread half of the crumbly topping evenly in a greased 9×9-inch baking pan to create the base crust.
- Add the fruit: Layer the peeled and sliced peaches followed by the sliced strawberries evenly over the base crust in the pan.
- Make the syrup: In a small saucepan, combine 1/4 cup brown sugar, cornstarch, salt, and water. Cook over medium heat, stirring constantly until the mixture thickens into a syrup. Remove from heat and stir in vanilla extract.
- Pour the syrup over fruit: Evenly drizzle the thickened syrup over the layered fruit to add sweetness and moisture.
- Finish the topping: Sprinkle the remaining crumbly topping evenly over the syrup-covered fruit layer.
- Bake the crisp: Place the baking pan in a preheated oven at 350°F (175°C) and bake for 35 minutes until the topping is golden and crisp.
- Optional broil for color: For a crispier and more golden topping, broil the crisp for 2-3 minutes at the end of baking, watching carefully to prevent burning.
Notes
- You can substitute the peaches or strawberries with other seasonal fruits like blueberries or raspberries.
- Make sure to peel the peaches for a smoother texture in the fruit layer.
- If you prefer a less sweet dessert, reduce the brown sugar in the syrup or topping.
- Serve warm with vanilla ice cream or whipped cream for an extra indulgent dessert.
- Store leftovers covered in the refrigerator for up to 3 days; reheat before serving.
