Description

This Strawberry Peach Crisp is a delightful dessert that combines juicy peaches and fresh strawberries under a sweet, crumbly oat topping. With a subtly spiced cinnamon flavor and a rich brown sugar syrup, it’s baked to golden perfection and offers a perfect balance of fruitiness and crunch. It’s an easy-to-make treat that’s excellent for summer or anytime you crave a fruity, comforting dessert.

Ingredients

For the Topping

  • 1/2 cup old fashioned oats
  • 1/2 cup brown sugar
  • 2/3 cup flour
  • 1/3 cup salted butter, melted
  • 1/2 tsp cinnamon

For the Fruit Filling

  • 2 1/2 cups peaches, peeled and sliced (about 3 peaches)
  • 1 cup sliced strawberries

For the Syrup

  • 1/4 cup brown sugar
  • 3 teaspoons cornstarch
  • 1/3 cup water
  • 1/8 teaspoon salt
  • 1/2 teaspoon vanilla extract

Instructions

  1. Mix the topping: In a medium bowl, combine the oats, 1/2 cup brown sugar, flour, and cinnamon. Stir in the melted salted butter and mix until the mixture is crumbly.
  2. Prepare the base layer: Spread half of the crumbly topping evenly in a greased 9×9-inch baking pan to create the base crust.
  3. Add the fruit: Layer the peeled and sliced peaches followed by the sliced strawberries evenly over the base crust in the pan.
  4. Make the syrup: In a small saucepan, combine 1/4 cup brown sugar, cornstarch, salt, and water. Cook over medium heat, stirring constantly until the mixture thickens into a syrup. Remove from heat and stir in vanilla extract.
  5. Pour the syrup over fruit: Evenly drizzle the thickened syrup over the layered fruit to add sweetness and moisture.
  6. Finish the topping: Sprinkle the remaining crumbly topping evenly over the syrup-covered fruit layer.
  7. Bake the crisp: Place the baking pan in a preheated oven at 350°F (175°C) and bake for 35 minutes until the topping is golden and crisp.
  8. Optional broil for color: For a crispier and more golden topping, broil the crisp for 2-3 minutes at the end of baking, watching carefully to prevent burning.

Notes

  • You can substitute the peaches or strawberries with other seasonal fruits like blueberries or raspberries.
  • Make sure to peel the peaches for a smoother texture in the fruit layer.
  • If you prefer a less sweet dessert, reduce the brown sugar in the syrup or topping.
  • Serve warm with vanilla ice cream or whipped cream for an extra indulgent dessert.
  • Store leftovers covered in the refrigerator for up to 3 days; reheat before serving.
