Ingredients
Fresh Strawberry Purée:
- 1 pound fresh strawberries, hulled and chopped
- 1/2 cup granulated sugar
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
Gelatin Mixture:
- 1 tablespoon unflavored gelatin
- 3 tablespoons cold water
Whipped Cream:
- 1 cup heavy whipping cream
- 2 tablespoons powdered sugar
Instructions
- Prepare Strawberry Purée: In a saucepan, cook strawberries, sugar, and lemon juice until soft. Blend until smooth, add vanilla.
- Prepare Gelatin Mixture: Bloom gelatin in water, melt, and stir into strawberry purée. Cool to room temperature.
- Whip Cream: In a separate bowl, whip cream and sugar to soft peaks.
- Combine & Chill: Gently fold whipped cream into strawberry mixture. Chill for 3 hours. Serve cold.

- For a lighter version, substitute some whipped cream with Greek yogurt.
