Ingredients

  • 1 ½ cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon salt

Wet Ingredients:

  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ¼ cup fresh lime juice
  • 1 tablespoon lime zest
  • ½ cup whole milk
  • ½ cup diced fresh strawberries
  • ½ cup diced fresh mango
  • 2 tablespoons tequila (optional)


Instructions

  1. Preheat and Prepare: Preheat the oven to 350°F and line a 12-cup muffin pan with paper liners.
  2. Mix Dry Ingredients: Whisk together the flour, baking powder, and salt in a medium bowl.
  3. Cream Butter and Sugar: In a large mixing bowl, cream together the butter and sugar until light and fluffy.
  4. Add Wet Ingredients: Beat in the eggs one at a time, then add vanilla extract, lime juice, and lime zest.
  5. Combine and Bake: Gradually mix in the dry ingredients and milk, alternating and ending with the dry ingredients. Fold in diced strawberries and mango, and tequila if using. Bake for 18–22 minutes.
  6. Cool and Serve: Let the cupcakes cool in the pan for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • For a non-alcoholic version, omit the tequila.
