Ingredients
Dry Ingredients:

- 1 ½ teaspoons baking powder
- ¼ teaspoon salt
Wet Ingredients:
- ½ cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- ¼ cup fresh lime juice
- 1 tablespoon lime zest
- ½ cup whole milk
- ½ cup diced fresh strawberries
- ½ cup diced fresh mango
- 2 tablespoons tequila (optional)
Instructions
- Preheat and Prepare: Preheat the oven to 350°F and line a 12-cup muffin pan with paper liners.
- Mix Dry Ingredients: Whisk together the flour, baking powder, and salt in a medium bowl.
- Cream Butter and Sugar: In a large mixing bowl, cream together the butter and sugar until light and fluffy.
- Add Wet Ingredients: Beat in the eggs one at a time, then add vanilla extract, lime juice, and lime zest.
- Combine and Bake: Gradually mix in the dry ingredients and milk, alternating and ending with the dry ingredients. Fold in diced strawberries and mango, and tequila if using. Bake for 18–22 minutes.
- Cool and Serve: Let the cupcakes cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
Notes
- For a non-alcoholic version, omit the tequila.
- You can top these cupcakes with lime cream cheese frosting or strawberry-mango buttercream for extra flavor.
- If the fruit is very juicy, pat it dry before folding into the batter to avoid excess moisture.
