Ingredients
For the Cookies:
- 1 box (15.25 oz) strawberry cake mix
- 1/4 cup lemon juice
- 1 tablespoon lemon zest
- 1/3 cup vegetable oil
- 2 large eggs
- 1/2 cup white chocolate chips (optional)
- powdered sugar for rolling (optional)
Instructions
- Preheat the Oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Mix Ingredients: In a large bowl, combine the cake mix, lemon juice, lemon zest, oil, and eggs. Stir until a thick dough forms. Fold in the white chocolate chips if using.
- Form Dough: Scoop tablespoon-sized portions of dough and roll into balls. Optionally, roll each ball in powdered sugar for a crinkle effect.
- Bake: Place the dough balls on the baking sheet and bake for 9 to 11 minutes until the edges are set and the centers are slightly soft.
- Cool and Serve: Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

- For extra lemon flavor, consider adding 1/2 teaspoon of lemon extract.
- Store cookies in an airtight container at room temperature for up to 5 days.
