Description

A delicious no-bake Strawberry Eclair Cake featuring a buttery graham cracker crust layered with creamy vanilla pudding and whipped cream mixture, fresh strawberries, and topped with a rich chocolate glaze. Perfect for an easy yet elegant dessert that sets in the refrigerator.

Ingredients

Crust

  • 2 1/2 cups graham cracker crumbs
  • 1/2 cup melted butter
  • 1/4 cup sugar

Filling

  • 2 cups heavy whipping cream
  • 1 box (3.4 oz) instant vanilla pudding mix
  • 1 cup milk
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Fresh strawberries for layering and garnish

Chocolate Glaze

  • 1/2 cup chocolate chips
  • 2 tablespoons heavy cream

Instructions

  1. Prepare the crust: In a medium bowl, combine the graham cracker crumbs, melted butter, and sugar. Mix until well combined, then press the mixture firmly into the bottom of a 9×13-inch pan to form an even crust layer.
  2. Make the pudding mixture: In a separate bowl, whisk together the heavy whipping cream, instant vanilla pudding mix, milk, powdered sugar, and vanilla extract. Continue whisking until the mixture thickens and becomes smooth.
  3. Layer the first pudding portion: Spread half of the pudding mixture evenly over the graham cracker crust in the pan to create the first creamy layer.
  4. Add the strawberries: Place a layer of fresh, sliced strawberries over the pudding mixture to add sweetness and texture.
  5. Layer the remaining pudding: Spread the rest of the pudding mixture over the strawberries, smoothing it out evenly to cover the entire surface.
  6. Prepare the chocolate glaze: In a microwave-safe bowl, combine the chocolate chips and heavy cream. Microwave in 30-second intervals, stirring in between, until the chocolate is melted and the glaze is smooth and glossy.
  7. Add the glaze and chill: Drizzle the chocolate glaze evenly over the top of the cake. Refrigerate the cake for at least 4 hours or overnight to allow it to set properly.
  8. Garnish and serve: Before serving, garnish the top with additional fresh strawberries for an attractive presentation and added fresh flavor.

Notes

  • For best results, refrigerate overnight to allow the cake to set fully and flavors to meld.
  • Use fresh, ripe strawberries for the best taste and texture.
  • The crust can also be made with crushed vanilla wafers as an alternative.
  • Make sure to whisk the pudding mixture thoroughly to avoid lumps and achieve a smooth, creamy consistency.
  • Chocolate glaze can be customized by adding a pinch of salt or a teaspoon of instant coffee for enhanced flavor.
