Instructions

  1. Prepare the oven and pan: Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving some overhang for easy removal.
  2. Make the crumb mixture: In a large bowl, whisk together the melted butter and granulated sugar until smooth. Add the flour, oats, baking powder, and salt. Stir until the mixture becomes crumbly but holds together when squeezed.
  3. Form the base: Press about two-thirds of the crumb mixture firmly and evenly into the bottom of the prepared pan to form the base.
  4. Prepare the strawberry filling: In a medium bowl, gently toss together the chopped strawberries, sugar, cornstarch, and lemon juice until well-coated and evenly mixed.
  5. Add the filling to the base: Spread the strawberry filling evenly over the crumb base.
  6. Add the crumb topping: Sprinkle the remaining crumb mixture evenly over the strawberry layer, squeezing some of it together to create little clusters for added texture.
  7. Bake the bars: Bake for 35–40 minutes, or until the topping is golden brown and the filling is bubbling.
  8. Cool and cut: Remove from the oven and let the bars cool completely in the pan, then use the parchment overhang to lift them out and slice into bars.
