Ingredients

Cookies:

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup freeze-dried strawberries, crushed
  • 1 cup white chocolate chips

Cheesecake Filling:

  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract


Instructions

  1. Cheesecake Filling: In a medium bowl, mix cream cheese, powdered sugar, and vanilla extract until smooth. Scoop small teaspoons of the filling onto a parchment-lined tray and freeze for 30 minutes.
  2. Cookies: Preheat oven to 350°F (175°C) and line baking sheets with parchment paper. In a large bowl, cream butter, granulated sugar, and brown sugar until light and fluffy. Add eggs and vanilla and mix until combined. In a separate bowl, whisk flour, baking soda, and salt. Gradually add dry ingredients to the wet mixture. Fold in crushed freeze-dried strawberries and white chocolate chips. Scoop 2 tablespoons of dough, flatten slightly, place a frozen cheesecake ball in the center, and wrap the dough around to seal. Roll gently into a ball and place on the baking sheet. Bake for 11–13 minutes, until edges are set and centers are just slightly underbaked. Let cool on the sheet for 5 minutes before transferring to a wire rack.
