Ingredients
Graham Cracker Crust:
- 1 cup graham cracker crumbs
- 3 tablespoons unsalted butter, melted
Cheesecake Filling:
- 8 ounces cream cheese, softened
- 1/4 cup powdered sugar
- 1/2 teaspoon vanilla extract
- 1/2 cup heavy cream, whipped to stiff peaks
Additional:
- 12 fresh strawberries, hulled and halved
- Extra graham cracker crumbs and melted white chocolate for garnish (optional)
Instructions
- Prepare Graham Cracker Crust: Mix graham cracker crumbs with melted butter. Press mixture into mini muffin liners to form a crust. Chill.
- Make Cheesecake Filling: Beat cream cheese until smooth. Add powdered sugar and vanilla extract. Fold in whipped cream until fluffy.
- Assemble: Spoon or pipe filling onto crusts. Top with a strawberry half.
- Chill: Refrigerate for at least 1 hour before serving. Garnish with graham cracker crumbs or melted white chocolate if desired.
