Description

This Stove Top Stuffing Meatloaf is a comforting and easy-to-make oven-baked main course that combines the classic flavors of ground beef with the savory taste of stuffing mix. Perfect for a family dinner, it features a moist and flavorful meatloaf topped with a tangy ketchup glaze and baked to perfection.

Ingredients

Meatloaf Mixture

  • 1 box (6 oz) Stove Top stuffing mix (any flavor)
  • 1 cup water or beef broth
  • 2 pounds ground beef
  • 2 large eggs
  • 1/2 cup ketchup (plus more for topping)
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to ensure it is at the right temperature for baking the meatloaf.
  2. Prepare Stuffing Mix: In a large bowl, combine the Stove Top stuffing mix with the water or beef broth. Let it sit for 2 to 3 minutes until the stuffing softens and absorbs the liquid.
  3. Mix Ingredients: Add the ground beef, eggs, 1/2 cup ketchup, Worcestershire sauce, garlic powder, onion powder, salt, and pepper to the softened stuffing mixture. Stir gently until just combined to avoid making the meatloaf dense.
  4. Form Meatloaf: Transfer the mixture into a greased loaf pan. Shape it gently into a loaf form, ensuring it is evenly packed for uniform cooking.
  5. Add Ketchup Topping: Spread a thin layer of ketchup evenly over the top of the meatloaf to add flavor and create a glaze as it bakes.
  6. Bake: Place the meatloaf in the preheated oven and bake uncovered for 50 to 60 minutes, or until the internal temperature reaches 160°F (71°C), ensuring it is fully cooked.
  7. Rest and Serve: Remove the meatloaf from the oven and let it rest for 5 to 10 minutes. This helps the juices redistribute, making it easier to slice and more flavorful when served.

Notes

  • For extra flavor, mix in sautéed onions or chopped parsley into the meatloaf mixture.
  • You can substitute ground turkey for ground beef for a lighter option.
  • Leftovers are excellent for making sandwiches the next day.
