Description

This Stove Top Stuffing Meatloaf is a comforting and easy-to-make oven-baked dish that combines savory ground meat with flavorful stuffing mix. Perfect for a hearty weeknight dinner, it offers a classic glaze of ketchup and can be customized with cheese or alternative ground meats for a leaner option.

Ingredients

Meatloaf Mixture

  • 1 box (6 oz) Stove Top stuffing mix (any flavor)
  • 1 cup water or milk
  • 2 pounds ground beef (or a mix of ground beef and pork)
  • 2 large eggs
  • 1/2 cup ketchup (plus more for topping)
  • 1 small onion, finely chopped
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt

Garnish

  • Chopped parsley (optional)

Instructions

  1. Preheat the oven: Set your oven to 375°F (190°C) to ensure it reaches the proper temperature while you prepare the meatloaf mixture.
  2. Prepare the stuffing mix: In a large bowl, combine the Stove Top stuffing mix with 1 cup of water or milk. Allow it to sit for 5 minutes so the stuffing softens adequately.
  3. Combine ingredients: Add the ground beef, eggs, 1/2 cup ketchup, finely chopped onion, garlic powder, salt, and black pepper to the softened stuffing mixture. Mix everything together thoroughly but avoid overmixing to keep the meatloaf tender.
  4. Shape the meatloaf: Transfer the mixture to a greased 9×5-inch loaf pan or shape it into a loaf shape on a lined baking sheet for baking.
  5. Add ketchup glaze: Spread a thin layer of ketchup over the top of the meatloaf to create a classic and flavorful glaze during baking.
  6. Bake: Place the meatloaf in the preheated oven and bake for 55 to 60 minutes, or until the internal temperature reaches 160°F (71°C) confirming it is safely cooked through.
  7. Rest the meatloaf: Remove from the oven and let it rest for 5 to 10 minutes before slicing; this helps the juices redistribute, keeping the meatloaf moist.
  8. Garnish and serve: Optionally, sprinkle chopped parsley over the slices for a fresh, colorful finish before serving.

Notes

  • For a leaner version, substitute ground turkey in place of beef.
  • Add shredded cheese into the meat mixture or on top for extra flavor and richness.
  • This meatloaf pairs wonderfully with mashed potatoes or roasted vegetables for a complete meal.
