Instructions

  1. Prepare the bok choy: Rinse the baby bok choy thoroughly under cold water to remove any dirt. Slice each bulb in half lengthwise and pat dry using a paper towel to remove excess moisture.
  2. Heat the oil and aromatics: In a large skillet or wok, heat the sesame oil over medium-high heat. Add the minced garlic and freshly grated ginger and sauté for about 30 seconds until fragrant, being careful not to burn them.
  3. Sear the bok choy: Place the bok choy in the skillet cut side down and sear for 2 to 3 minutes to develop a slight char. Flip the pieces and cook for another 2 to 3 minutes until the bok choy is tender but still retains some crispness.
  4. Add the sauce: Pour in the low-sodium soy sauce, water, and rice vinegar if using. Toss everything together to evenly coat the bok choy and cook for an additional minute to meld the flavors.
  5. Finish and serve: Remove from heat and transfer the bok choy to a serving dish. Sprinkle toasted sesame seeds and optional red pepper flakes over the top for garnish. Serve warm as a delicious side dish.
