Ingredients
For the Steak:
- 2 (10-ounce) ribeye or sirloin steaks
- 3 tablespoons olive oil
- salt and black pepper to taste
For the Fries:
- 1 1/2 pounds russet potatoes, cut into thin fries
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 3 cloves garlic, smashed
- 2 sprigs fresh thyme
- salt and black pepper to taste
- optional: fresh parsley and coarse sea salt for garnish
Instructions
- Preheat the Oven: Preheat the oven to 425°F (220°C).
- Prepare the Fries: Toss the potatoes with 2 tablespoons olive oil, salt, and pepper. Bake for 30–35 minutes until golden and crisp.
- Cook the Steaks: Season steaks with salt and pepper. Sear in a hot skillet with olive oil for 3–4 minutes per side. Add butter, garlic, and thyme, basting the steaks.
- Rest and Serve: Let the steaks rest for 5 minutes before serving hot with fries on the side. Garnish with parsley and sea salt if desired.
