Description

Ingredients

For the Steak:

  • 2 (10-ounce) ribeye or sirloin steaks
  • 3 tablespoons olive oil
  • salt and black pepper to taste

For the Fries:

  • 1 1/2 pounds russet potatoes, cut into thin fries
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 3 cloves garlic, smashed
  • 2 sprigs fresh thyme
  • salt and black pepper to taste
  • optional: fresh parsley and coarse sea salt for garnish


Instructions

  1. Preheat the Oven: Preheat the oven to 425°F (220°C).
  2. Prepare the Fries: Toss the potatoes with 2 tablespoons olive oil, salt, and pepper. Bake for 30–35 minutes until golden and crisp.
  3. Cook the Steaks: Season steaks with salt and pepper. Sear in a hot skillet with olive oil for 3–4 minutes per side. Add butter, garlic, and thyme, basting the steaks.
  4. Rest and Serve: Let the steaks rest for 5 minutes before serving hot with fries on the side. Garnish with parsley and sea salt if desired.

Notes

  • For extra crispy fries, soak the potato strips in cold water for 30 minutes before baking, then pat dry.
  • Pair with béarnaise, aioli, or peppercorn sauce on the side for extra flavor.
