Cheesy and flavorful, this Spinach Ziti is a delicious vegetarian pasta bake that’s perfect for a cozy family dinner. With layers of creamy ricotta, fresh spinach, ziti pasta, and gooey melted cheese, this dish is sure to become a favorite!

Ingredients

Ziti Pasta:

  • 12 oz ziti pasta

Sauce:

  • 1 tablespoon olive oil
  • 3 cloves garlic (minced)
  • 5 oz fresh spinach (roughly chopped)
  • 2 cups ricotta cheese
  • 1 egg
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 2 cups marinara sauce
  • 1 1/2 cups shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat the oven: Preheat the oven to 375°F.
  2. Cook the ziti: Cook the ziti according to package directions until al dente, then drain and set aside.
  3. Sauté garlic and spinach: In a large skillet, heat olive oil over medium heat. Add garlic and cook for 1 minute until fragrant. Add spinach and sauté until wilted.
  4. Prepare ricotta mixture: In a large bowl, mix ricotta, egg, salt, black pepper, and red pepper flakes if using. Stir in the cooked spinach and garlic. Add the drained ziti and mix well.
  5. Assemble and bake: Spread marinara sauce in a baking dish, add ziti mixture, top with more sauce and cheeses. Bake covered, then uncovered until bubbly and golden.
  6. Serve: Let sit for 5 minutes before serving.

Notes

  • You can substitute frozen spinach (thawed and drained) if fresh isn’t available.
  • Add cooked sausage or mushrooms for extra protein and flavor.
