Description

A fresh and vibrant Spinach Strawberry Salad with creamy feta cheese, crunchy toasted almonds, and a tangy balsamic dressing. Perfectly balanced with sweet strawberries and a hint of Dijon mustard in the dressing, this salad is quick to prepare and ideal for a light and healthy meal.

Ingredients

Salad Ingredients

  • 6 cups baby spinach
  • 1 cup fresh strawberries, hulled and sliced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup sliced almonds, toasted
  • Optional: 1/4 cup red onion, thinly sliced

Dressing Ingredients

  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon honey or maple syrup
  • 1/2 teaspoon Dijon mustard
  • Salt and black pepper to taste

Instructions

  1. Prepare the Salad: In a large salad bowl, combine the baby spinach, sliced strawberries, crumbled feta cheese, and toasted almonds. If using red onion, add thinly sliced red onions to the bowl as well. Gently toss to mix the ingredients evenly.
  2. Make the Dressing: In a small bowl, whisk together olive oil, balsamic vinegar, honey or maple syrup, Dijon mustard, salt, and black pepper until the mixture is well emulsified and smooth.
  3. Assemble the Salad: Drizzle the prepared dressing over the salad just before serving. Toss gently to coat all ingredients evenly with the dressing. Taste and adjust seasoning as needed. Serve immediately to enjoy the fresh flavors at their best.

Notes

  • For a nuttier flavor, toast the almonds lightly in a dry skillet over medium heat until golden brown before adding to the salad.
  • Strawberries should be fresh and ripe for the sweetest flavor; avoid canned or frozen versions.
  • The dressing can be made ahead of time and stored in the refrigerator for up to 2 days.
  • Add a protein like grilled chicken or chickpeas to make this salad a more substantial meal.
  • Red onion is optional but adds a nice sharp contrast to the sweetness of strawberries.
