Ingredients

Main Ingredients:

  • 1 tablespoon olive oil
  • 1 small onion (finely chopped)
  • 2 garlic cloves (minced)
  • 5 cups fresh spinach (roughly chopped)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon ground nutmeg

For the Ricotta Mixture:

  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 6 large eggs
  • 1/4 cup milk

For Topping:

  • 1/2 cup shredded mozzarella cheese
  • Optional garnish: chopped parsley or extra Parmesan

Instructions

  1. Preheat and Prepare: Preheat the oven to 375°F and grease an 8×8-inch baking dish.
  2. Sauté Aromatics and Spinach: In a skillet, sauté onion, garlic, then add spinach, salt, pepper, nutmeg until wilted.
  3. Mix Ricotta Mixture: Combine ricotta, Parmesan, eggs, and milk. Stir in the spinach mixture.
