Description

A delicious and savory Spinach Egg Cheese Pie featuring a flaky pre-made pie crust filled with a creamy mixture of eggs, fresh spinach, and a blend of mozzarella, feta, and Parmesan cheeses. Perfect for breakfast or brunch, this vegetarian pie is easy to prepare and baked to golden perfection.

Ingredients

Pie Crust

  • 1 pre-made 9-inch pie crust (or homemade)

Filling

  • 5 large eggs
  • 1 cup whole milk or half-and-half
  • 1 1/2 cups chopped fresh spinach (or 1 cup thawed, drained frozen spinach)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup crumbled feta cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to ensure it reaches the perfect temperature for baking the pie.
  2. Prepare Pie Crust: If using a refrigerated pie crust, press it gently into a 9-inch pie dish. Crimp the edges to create a decorative border and ensure it holds the filling.
  3. Mix Filling: In a mixing bowl, whisk together the 5 large eggs and 1 cup of whole milk or half-and-half until smooth and well combined.
  4. Add Ingredients: Stir in the chopped fresh spinach, shredded mozzarella, crumbled feta, grated Parmesan, garlic powder, onion powder, salt, and black pepper. Mix until evenly incorporated.
  5. Fill Pie Crust: Pour the egg and spinach mixture evenly into the prepared pie crust, spreading it out to fill the crust completely.
  6. Bake: Place the pie in the oven and bake for 35 to 40 minutes, or until the center is set and the top is lightly golden brown.
  7. Cool and Serve: Remove the pie from the oven and let it cool for about 10 minutes before slicing. Serve warm for the best flavor experience.

Notes

  • You can substitute kale or Swiss chard for the spinach for a different flavor and texture.
  • Adding cooked mushrooms or onions can enhance the flavor and add more depth to the filling.
  • This pie can be served warm, cold, or at room temperature, making it versatile for breakfast, lunch, or brunch.
