Ingredients
Pie Crust
- 1 prepared 9-inch pie crust
Filling
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cups fresh spinach, chopped
- 4 large eggs
- 1 cup whole milk
- 1 cup shredded mozzarella cheese
- 1/2 cup crumbled feta cheese
- 1/4 cup grated Parmesan cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon nutmeg
Instructions
- Preheat the Oven: Preheat your oven to 375°F (190°C) to ensure it reaches the right temperature for baking the pie evenly.
- Prepare the Pie Crust: Place the prepared 9-inch pie crust into a pie dish and set it aside while you prepare the filling.
- Sauté Onion and Spinach: Heat the olive oil in a skillet over medium heat. Add the finely chopped onion and sauté until soft and translucent, about 3 to 5 minutes. Add the chopped spinach and cook for an additional 1 to 2 minutes until wilted. Remove the skillet from heat and allow the mixture to cool slightly.
- Make the Egg Mixture: In a large bowl, whisk together the eggs, whole milk, salt, black pepper, and nutmeg until fully combined.
- Add Cheeses and Spinach: Stir in the shredded mozzarella, crumbled feta, and grated Parmesan cheese. Then add the cooled sautéed spinach and onion mixture, folding gently to combine all ingredients well.
- Assemble the Pie: Pour the filling evenly into the prepared pie crust, spreading it out smoothly.
- Bake: Bake in the preheated oven for 40 to 45 minutes, or until the center is set and the top is lightly golden brown.
- Rest and Serve: Remove the pie from the oven and let it rest for 10 minutes to set further before slicing and serving. This pie is delicious warm or at room temperature.
Notes
- You can substitute half-and-half for whole milk for a richer, creamier filling.
- Add cooked mushrooms or other vegetables to the spinach mixture for extra flavor and texture.
- The pie can be served warm or at room temperature, making it great for packed lunches or picnics.
