- 10 ounces fresh spinach, chopped or frozen spinach (thawed and drained)

- 1/2 cup whole milk
- 1 cup crumbled feta cheese
- 1/2 cup grated Parmesan cheese

- 1 tablespoon olive oil
- 1/4 teaspoon ground nutmeg

- 1/4 teaspoon black pepper
- 1/2 cup breadcrumbs (optional for topping)
Instructions
- Preheat and Prepare Dish: Preheat your oven to 375°F (190°C) and lightly grease an 8×8-inch or similar-sized baking dish to prevent sticking.
- Sauté Onions: Heat olive oil in a skillet over medium heat. Add the finely chopped onion and sauté until softened, about 4 minutes, stirring occasionally to ensure even cooking.
- Add Garlic and Spinach: Stir in the minced garlic and cook for an additional 1 minute until fragrant. Add the chopped fresh spinach and cook until wilted, or if using frozen spinach, cook until heated through. Remove the skillet from heat and let the mixture cool slightly.
- Mix Eggs and Dairy: In a large bowl, whisk together the eggs and whole milk until well combined. Then add crumbled feta cheese, grated Parmesan cheese, ground nutmeg, salt, and black pepper. Stir to incorporate all ingredients evenly.
- Combine Spinach Mixture: Fold the cooled spinach mixture into the egg and cheese mixture until fully integrated.
- Assemble and Bake: Pour the combined mixture into the prepared baking dish, spreading it out evenly. If desired, sprinkle breadcrumbs on top to add a crispy crust. Bake in the preheated oven for 30 to 35 minutes, or until the casserole is set in the center and the top is lightly golden.
- Rest and Serve: Remove from the oven and let the casserole rest for 5 minutes before slicing and serving to allow it to set further and enhance flavors.
