Description

A refreshing and vibrant Spinach & Fruit Salad featuring fresh baby spinach, sweet strawberries, blueberries, and toasted almonds, all tossed in a creamy, tangy honey-lemon dressing. This salad is perfect for a light lunch or a healthy side dish.

Ingredients

Dressing

  • ½ cup milk
  • Juice of ½ a lemon
  • ½ cup mayonnaise or light mayonnaise
  • 1½ tablespoons Onion Onion™ Seasoning
  • 1 tablespoon honey

Salad

  • 1 (10 ounce) package fresh baby spinach leaves
  • 2 cups sliced fresh strawberries
  • 1 cup fresh blueberries
  • ½ cup sliced almonds, toasted
  • ½ cup crumbled goat cheese (optional)
  • Fresh cracked black pepper (optional)

Instructions

  1. Prepare the dressing: In a small bowl, combine the milk and lemon juice. Let it stand for 1-2 minutes until it thickens slightly. Then whisk in the mayonnaise, Onion Onion Seasoning, and honey. Season with salt and pepper to taste, adjusting flavors as desired.
  2. Combine salad ingredients: In a large bowl, combine the fresh baby spinach leaves, sliced strawberries, fresh blueberries, and toasted sliced almonds, ensuring an even distribution of fruit and nuts.
  3. Toss the salad: Drizzle the desired amount of dressing over the salad mixture and gently toss to combine all ingredients, making sure the dressing coats the leaves and fruit evenly.
  4. Finish and serve: If using, sprinkle the salad with crumbled goat cheese and add freshly cracked black pepper to taste. Serve immediately to enjoy the freshest flavors.

Notes

  • For a lighter option, use light mayonnaise or Greek yogurt in place of mayonnaise.
  • To toast almonds, place them in a dry skillet over medium heat, stirring frequently until golden and fragrant.
  • Goat cheese is optional and can be omitted for a dairy-free version or replaced with a vegan cheese alternative.
  • This salad is best served immediately to prevent the spinach and fruit from becoming soggy.
  • Onion Onion™ Seasoning can be substituted with a mix of dried onion powder and garlic powder if unavailable.
