Description

These Spinach and Cheese Stuffed Cauliflower Patties are a delicious and nutritious low-carb snack or side dish. Packed with flavor and easy to make, they are perfect for a light lunch or a savory treat.


Ingredients

Cauliflower Patties:

  • 2 cups riced cauliflower (fresh or frozen and thawed)
  • 1 cup chopped fresh spinach
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup almond flour or breadcrumbs
  • 1 egg
  • 1 clove garlic, minced
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • olive oil for pan-frying


Instructions

  1. Prepare Cauliflower Mixture: Steam or microwave cauliflower until tender. Squeeze out excess moisture. Combine with spinach, cheeses, almond flour, egg, garlic, and seasonings.
  2. Form Patties: Shape mixture into 6–8 patties.
  3. Cook Patties: Pan-fry patties in olive oil until golden and firm on each side.
  4. Serve: Drain excess oil on paper towels and serve warm.
