Ingredients
Pasta:
- 12 ounces penne or rotini pasta
Chicken:
- 1 tablespoon olive oil
- 2 boneless, skinless chicken breasts (diced)
Sauce:
- 3 cloves garlic (minced)
- 1 (14-ounce) can artichoke hearts (drained and chopped)
- 4 cups fresh spinach (roughly chopped)
- 4 ounces cream cheese (softened)
- 1/2 cup sour cream
- 1/2 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup milk (or more as needed)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon crushed red pepper flakes (optional)
Instructions
- Cook the pasta: Boil pasta until al dente, then drain.
- Sear the chicken: Cook diced chicken in olive oil until golden.
- Prepare the sauce: Sauté garlic, artichokes, and spinach. Add cream cheese, sour cream, Parmesan, mozzarella, and milk. Mix until creamy.
