Description

Ingredients

Pasta:

  • 12 ounces penne or rotini pasta

Chicken:

  • 1 tablespoon olive oil
  • 2 boneless, skinless chicken breasts (diced)

Sauce:

  • 3 cloves garlic (minced)
  • 1 (14-ounce) can artichoke hearts (drained and chopped)
  • 4 cups fresh spinach (roughly chopped)
  • 4 ounces cream cheese (softened)
  • 1/2 cup sour cream
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup milk (or more as needed)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes (optional)


Instructions

  1. Cook the pasta: Boil pasta until al dente, then drain.
  2. Sear the chicken: Cook diced chicken in olive oil until golden.
  3. Prepare the sauce: Sauté garlic, artichokes, and spinach. Add cream cheese, sour cream, Parmesan, mozzarella, and milk. Mix until creamy.
  4. Combine: Add cooked chicken and pasta to the sauce. Toss until well coated.
