Ingredients

  • 1 1/2 cups frozen corn (thawed)
  • 1/2 cup crumbled cotija cheese (or feta)
  • 1/2 cup shredded pepper jack cheese
  • 1/4 cup mayonnaise
  • 1 large egg
  • 1/4 cup chopped green onions
  • 1 tablespoon chopped cilantro
  • 1 tablespoon lime juice
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon cayenne pepper (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup breadcrumbs

Instructions

  1. Preheat the oven: Preheat oven to 375°F (190°C) and grease a mini muffin tin with cooking spray.
  2. Prepare the mixture: In a large bowl, combine thawed corn, cotija cheese, pepper jack cheese, mayonnaise, egg, green onions, cilantro, lime juice, chili powder, cumin, cayenne (if using), salt, and pepper. Mix in breadcrumbs until well combined.
  3. Bake: Scoop the mixture into the mini muffin cups, pressing down lightly. Bake for 18–22 minutes until golden and set.
  4. Serve: Allow to cool slightly before removing from the tin. Serve warm with lime wedges or hot sauce.

Notes

  • For a milder version, reduce or omit the cayenne.
