Ingredients
For the Grilled Beef
- 200g (7 oz) beef sirloin, thinly sliced
- 1 tbsp soy sauce
- 1 tsp sesame oil
- 1/2 tsp sugar
- 1 clove garlic, minced
- 1/4 tsp freshly ground black pepper
For the Creamy Spicy Sauce
- 2 tbsp mayonnaise
- 1 tbsp gochujang (Korean red chili paste)
- 1 tsp rice vinegar
- 1 tsp honey
- 1 tsp toasted sesame oil
- 1/2 tsp garlic powder
For the Ramen
- 1 (120g) pack dried Korean-style ramen noodles (or instant ramen, seasoning packet discarded)
- 3 cups water
- 1/2 cup baby spinach (optional)
For Garnish
- 2 tbsp sliced scallions
- 1 tsp toasted sesame seeds
- 1 soft-boiled egg (optional)
Instructions
- Marinate the Beef: In a bowl, combine the sliced beef with soy sauce, sesame oil, sugar, minced garlic, and black pepper. Mix well and let it marinate while you prepare the other ingredients.
- Prepare the Creamy Spicy Sauce: In a small bowl, whisk together mayonnaise, gochujang, rice vinegar, honey, sesame oil, and garlic powder until smooth. Set aside.
- Grill the Beef: Heat a grill pan or skillet over medium-high heat. Arrange the marinated beef slices in a single layer and grill for 1–2 minutes per side, until browned and cooked through. Set aside and keep warm.
- Cook the Ramen: Bring 3 cups of water to a boil in a medium saucepan. Add the dried ramen noodles and cook according to package instructions (usually about 3–4 minutes). During the last minute, add baby spinach if using. Drain the noodles and transfer to a bowl.
- Assemble the Dish: Toss the hot noodles with the creamy spicy sauce until well coated. Top with grilled beef, sliced scallions, sesame seeds, and a halved soft-boiled egg if desired.
