Ingredients
For the Croquettes:
- 1 lb ground beef, 85% lean
- 1 cup mashed potatoes
- 1/2 cup finely chopped onion
- 3 cloves garlic, minced
- 1 small red chili, finely chopped (or 1/2 tsp chili flakes)
- 1/4 cup chopped parsley
- 1 tsp smoked paprika
- 1/2 tsp ground cumin
- 1 tsp salt
- 1/2 tsp black pepper
- 1 large egg, beaten
For Coating and Frying:
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 1 1/2 cups panko breadcrumbs
- vegetable oil, for frying
Instructions
- Cook the Beef Mixture: In a skillet, cook onion until soft, add garlic and chili, then brown ground beef. Season with smoked paprika, cumin, salt, and pepper. Let cool.
- Make the Croquettes: Combine beef mixture with mashed potatoes, parsley, and egg. Shape into croquettes, coat in flour, eggs, and breadcrumbs.
- Fry the Croquettes: Heat oil, fry croquettes until golden and crispy. Drain on paper towels before serving hot.
Notes
- You can substitute ground chicken or turkey for beef.
- For less heat, use less chili or omit it entirely.
- Croquettes can be made ahead and frozen before frying.
