Description

Spicy Cowboy Queso is a flavorful and creamy Tex-Mex appetizer featuring spicy sausage, cheeses, and a kick of jalapeño, perfect for parties and gatherings.


Ingredients

  • 1 tablespoon olive oil
  • 1/2 pound spicy breakfast sausage or chorizo
  • 1/2 yellow onion (finely chopped)
  • 1 jalapeño (seeded and diced)
  • 2 garlic cloves (minced)
  • 1 can (10 oz) diced tomatoes with green chiles (drained)
  • 1 can (15 oz) black beans (drained and rinsed)
  • 8 oz cream cheese (cubed)
  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup whole milk (more if needed)
  • 1/4 teaspoon smoked paprika
  • Salt to taste
  • Chopped cilantro and sliced green onions for garnish


Instructions

  1. Heat olive oil: In a large skillet or saucepan, heat olive oil over medium heat.
  2. Cook sausage: Add sausage, cook until browned, and drain excess grease if needed.
  3. Add onion and jalapeño: Stir in onion and jalapeño, cook until softened.
  4. Include garlic: Add garlic and cook briefly.
  5. Stir in tomatoes and beans: Mix in diced tomatoes and black beans.
  6. Add cheeses: Reduce heat, add cream cheese, cheddar, and Monterey Jack, stir until melted.
  7. Adjust consistency: Slowly pour in milk to reach desired thickness.
