Ingredients
Salmon and Glaze
- 1 lb salmon fillets, skin removed and cut into 2-inch chunks
- 1 tablespoon olive oil
- 2 tablespoons honey
- 1 tablespoon adobo sauce (from canned chipotle peppers)
- 1 chipotle pepper in adobo, finely chopped
- Juice of 1 lime
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
Bowls and Toppings
- 2 cups cooked white or brown rice
- 1 cup shredded red cabbage
- 1 avocado, sliced
- 1/2 cup corn (grilled or canned)
- 1/4 cup chopped cilantro
- Lime wedges for serving
Instructions
- Preheat Oven: Preheat the oven to 425°F and line a baking sheet with parchment paper to prepare for roasting the salmon.
- Make the Chipotle Honey Glaze: In a small bowl, whisk together olive oil, honey, adobo sauce, chopped chipotle pepper, lime juice, smoked paprika, garlic powder, and salt until well combined.
- Coat the Salmon: Place the salmon chunks in a medium bowl and toss them with the chipotle honey glaze until they are evenly coated with the mixture.
- Roast the Salmon: Arrange the glazed salmon pieces on the prepared baking sheet in a single layer. Roast in the preheated oven for 10 to 12 minutes, or until the salmon is cooked through and caramelized on the edges.
- Assemble the Bowls: While the salmon cooks, divide the cooked rice evenly among serving bowls. Top each bowl with shredded red cabbage, corn, sliced avocado, and the roasted salmon pieces.
- Add Garnishes and Serve: Sprinkle each bowl with chopped cilantro and serve with lime wedges on the side for an extra burst of fresh flavor.
Notes
- For extra heat, add an additional chipotle pepper or drizzle with hot sauce.
