Filling
- 1 pound boneless skinless chicken breasts, finely minced or ground
- 1 tablespoon vegetable oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1/2 teaspoon red chili flakes (adjust to taste)
- 1 teaspoon paprika
- 1/2 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon soy sauce
- 1 tablespoon hot sauce
Assembly
- 8 spring roll wrappers or egg roll wrappers
- Oil for frying or baking spray
Instructions
- Prepare the Filling: Heat vegetable oil in a skillet over medium heat. Add the chopped onion and sauté for 3 to 4 minutes until softened. Stir in minced garlic and cook for 30 seconds until fragrant.
- Cook the Chicken: Add the minced chicken to the pan and cook for 6 to 8 minutes, stirring frequently until fully cooked and no longer pink.
- Season the Filling: Add chili powder, red chili flakes, paprika, cumin, salt, and black pepper to the chicken. Stir to combine, then add soy sauce and hot sauce. Cook for another 1 to 2 minutes until the mixture is well combined and slightly thickened. Remove from heat and allow to cool slightly.
- Assemble the Rolls: Place a spring roll wrapper on a clean flat surface. Spoon some chicken mixture onto the center. Fold in the sides and roll tightly, sealing the edge with a little water to secure.
- Cook the Rolls: For frying, heat oil to 350°F and fry rolls for 3 to 4 minutes until golden brown and crispy. Alternatively, bake at 400°F for 18 to 20 minutes, turning once halfway through, or air fry at 380°F for 10 to 12 minutes until crisp.
- Serve: Drain cooked rolls on paper towels if fried to remove excess oil. Serve hot with sweet chili sauce or yogurt dip.
