Description

These Spicy Beef Taquitos are a crowd-pleasing appetizer or main course with a crispy exterior and a flavorful, cheesy beef filling. Perfect for any gathering or simply as a tasty snack.


Ingredients

For the beef filling:

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 small onion finely diced
  • 2 garlic cloves minced
  • 1 packet taco seasoning
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper
  • 1/2 cup salsa
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese

For assembly and serving:

  • 12 small flour or corn tortillas
  • Vegetable oil for frying
  • Sour cream and guacamole for serving

Instructions

  1. In a large skillet, cook the beef filling: Heat olive oil, sauté onion, add garlic, brown ground beef, drain, add seasonings and salsa, simmer, then cool and mix in cheeses.
  2. Prepare the taquitos: Warm tortillas, fill with beef mixture, roll tightly, and secure with toothpicks.
  3. Fry the taquitos: Heat oil, fry taquitos in batches until golden and crispy, then drain on paper towels.
  4. Serve: Enjoy hot taquitos with sour cream and guacamole.

Notes

  • If baking, arrange taquitos seam-side down on a greased baking sheet, brush with oil, and bake at 425°F (220°C) for 18–20 minutes.
  • Leftover taquitos can be frozen and reheated in the oven or air fryer.
