Description

This Spaghetti Squash with Broccoli and Ground Beef recipe is a delicious and nutritious low-carb alternative to traditional pasta dishes. The combination of tender spaghetti squash strands, flavorful ground beef, and vibrant broccoli creates a satisfying and hearty meal that is perfect for any day of the week.


Ingredients

For the Spaghetti Squash:

  • 1 large spaghetti squash (about 3–4 pounds)
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For the Ground Beef and Broccoli:

  • 1 pound ground beef
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 3 cups broccoli florets
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh parsley, chopped


Instructions

  1. Prepare the Spaghetti Squash: Preheat oven to 400°F (200°C). Cut spaghetti squash in half lengthwise, scoop out the seeds, drizzle with 1 tablespoon olive oil, season with salt and pepper, and roast cut side down on a baking sheet for 35–40 minutes. Scrape the flesh into strands using a fork.
  2. Cook the Ground Beef and Broccoli: In a large skillet, heat olive oil over medium-high heat. Cook ground beef until browned, then add onion and garlic. Add broccoli, seasonings, and cook until tender. Toss in the roasted spaghetti squash strands, sprinkle with Parmesan and parsley, and serve hot.

Notes

  • For a creamier version, stir in 1/4 cup heavy cream or cream cheese at the end.
  • Ground turkey can be used as a lighter alternative to beef.
